Enhancement In Shelf Life Of Perishables In Food Processing Industry: A Review Of Study

Abstract

- The food processing industry is considered to be an important part of economy .India is a developing country and leads in agriculture, however it is unable to utilize its potential in food processing industry. One of the main reasons is lack of technologies and expertise in the area. Only 2% of the total agriculture produced is used in food processing industry. This is so because there are food losses due to smaller shelf life of perishables. In this paper we review shelf life enhancement approaches and relate this to challenges faced by the industry. The main concern of this paper is quality of food, sustainability and safety. The approaches include vacuum freeze drying (lyophilization), dehydration, use of chemicals, edible coatings etc.The study involves review of different approaches using different sources like white papers, journals, books and text mining to identify what the study focuses on with the advantages and disadvantages that have been used in preserving perishables, their comparison.
